Stuffed peppers are a delightful and versatile dish that combines the vibrant sweetness of bell peppers with a flavorful and hearty filling. Here's a step-by-step guide on how to make delicious stuffed peppers:

  • 4 large bell peppers (choose a mix of colors for visual appeal)
  • 1 cup cooked rice (white or brown)
  • 1 pound ground protein (beef, turkey, chicken, Tofu, Tempeh)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or non-dairy cheese )
  • Fresh herbs for garnish (parsley, cilantro)

  1. Prepare the Peppers:

    • Preheat the oven to 375°F (190°C).
    • Use the Bright Kitchen Pepper Corer Tool to remove the seeds and membranes, and lightly brush them with olive oil. Place them in a baking dish.
  2. Cook the Filling:

    • In a large skillet, cook the ground protein over medium heat until browned. Drain excess fat if needed.
    • Add chopped onions, diced tomatoes, and zucchini to the skillet. Sauté until the vegetables are tender.
    • Stir in minced garlic, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes.
  3. Mix in Rice:

    • Add the cooked rice to the skillet with the protein and vegetables. Stir well to combine and let the flavors meld for a few minutes.
  4. Stuff the Peppers:

    • Spoon the filling into each prepared pepper, pressing it down gently. Top each stuffed pepper with a sprinkle of shredded cheese.
  5. Bake:

    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the peppers are tender.
  6. Serve:

    • Remove from the oven and let them cool slightly. Garnish with fresh herbs, and serve the stuffed peppers hot. You can pair them with salsa, sour cream, or a balsamic glaze for added flair.

These stuffed peppers make a wholesome and visually appealing meal, perfect for sharing with family and friends. Customize the filling to suit your taste, and enjoy a satisfying dish that combines textures and flavors in every bite.
