 There are 2 tools included, Large and Small. The Large size is for Bell Peppers, the small size works great with small skinny peppers such as hot peppers and Corno Di Toro peppers. The easiest way to de-seed a pepper and prep for yummy stuffed peppers!

Ingredients:

  • 4 large bell peppers (choose a mix of colors for visual appeal)
  • 1 cup cooked rice (white or brown)
  • 1 pound ground protein (beef, turkey, chicken, Tofu, Tempeh)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or non-dairy cheese )
  • Fresh herbs for garnish (parsley, cilantro)

Instructions:

  1. Prepare the Peppers:

    • Preheat the oven to 375°F (190°C).
    • Use the Bright Kitchen Pepper Corer Tool to remove the seeds and membranes, and lightly brush them with olive oil. Place them in a baking dish.
  2. Cook the Filling:

    • In a large skillet, cook the ground protein over medium heat until browned. Drain excess fat if needed.
    • Add chopped onions, diced tomatoes, and zucchini to the skillet. Sauté until the vegetables are tender.
    • Stir in minced garlic, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes.
  3. Mix in Rice:

    • Add the cooked rice to the skillet with the protein and vegetables. Stir well to combine and let the flavors meld for a few minutes.
  4. Stuff the Peppers:

    • Spoon the filling into each prepared pepper, pressing it down gently. Top each stuffed pepper with a sprinkle of shredded cheese.
  5. Bake:

    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the peppers are tender.
  6. Serve:

    • Remove from the oven and let them cool slightly. Garnish with fresh herbs, and serve the stuffed peppers hot. You can pair them with salsa, sour cream, or a balsamic glaze for added flair.
